Method
Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook gently for 4–5 minutes until softened. Stir in the turmeric and cook for another minute.
Add the sweet potatoes, broth, and chickpeas. Bring to a gentle boil, then reduce the heat and simmer for 20–25 minutes, or until the sweet potatoes are tender. Stir in the coconut milk and leafy greens and cook for 3–4 minutes until wilted. Season with black pepper and garnish with fresh coriander and lime wedges if desired.
Notes
Add cooked brown rice, quinoa, or whole-grain noodles for extra substance. For a lighter version, use less coconut milk and add more broth. Adjust the turmeric and ginger to your taste.
Caution
Coconut milk may be high in saturated fat; use light coconut milk if preferred. Chickpeas may cause digestive discomfort for some people. Turmeric and ginger may interact with certain medications. Check broth and seasoning labels for sodium and allergen information.
Benefits
May support a varied eating pattern through vegetables, legumes, coconut, and spices. Chickpeas and sweet potato may contribute fibre and plant-based nutrients, while the coconut milk adds richness and naturally occurring fats.
For Best Benefits
Allow the sweet potatoes to soften slowly and notice how the aroma of coconut and spice fills the kitchen. Serve the soup in warm bowls and take time to appreciate the creamy texture and gentle warmth.
