Method
Warm the vegetable broth in a saucepan and add the grated ginger and shiitake mushrooms. Bring the mixture to a gentle simmer and cook for approximately 10 minutes, allowing the mushrooms to soften and the ginger to infuse the broth. Add the bok choy and edamame, if using, and continue cooking for 3–4 minutes.
Remove the saucepan from the heat. In a small bowl, whisk the miso with a few tablespoons of the warm broth until smooth, then stir the mixture back into the saucepan. Finish with sesame oil, spring onion, and sesame seeds. Taste before adding any additional seasoning.
Notes
Do not boil the broth after adding the miso, as gentle heat helps preserve its delicate flavour. For a more substantial bowl, add edamame, soba noodles, tofu, or cooked brown rice. Use a low-sodium broth and adjust the amount of miso according to taste.
