Method

Add the chicken broth, carrot, celery, garlic, and thyme to a saucepan. Bring to a gentle simmer and cook for 12–15 minutes, or until the vegetables are tender. Add the shredded chicken and spinach and continue cooking for 3–4 minutes, just until the chicken is heated through and the spinach has wilted.

Remove the saucepan from the heat and stir in the lemon juice and fresh parsley. Season with black pepper and serve warm. If using freshly cooked chicken, ensure it is fully cooked before shredding and adding it to the broth.

Notes

Use leftover roast or poached chicken to make preparation easier. Add cooked rice, quinoa, noodles, or extra greens if you want a more substantial bowl. Fresh dill can be used in place of some of the parsley for a softer herbal flavour.
