Method
Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook gently for 4–5 minutes until softened but not browned. Stir in the turmeric and cook for another minute.
Add the carrots, celery, lentils, and vegetable broth. Bring to a gentle boil, then reduce the heat and simmer for 20–25 minutes, or until the lentils and vegetables are tender. Stir in the kale or spinach and cook for 3–4 minutes until wilted. Finish with lemon juice and black pepper. Garnish with fresh herbs if desired.
Notes
Add cooked brown rice, quinoa, or whole-grain pasta for extra substance. For a smoother texture, blend a portion of the soup and return it to the pot. Adjust the turmeric and ginger to your taste.
Caution
Turmeric and ginger may interact with certain medications. If you are pregnant, breastfeeding, or taking medication, consult a healthcare professional before using large amounts of spices. Lentils may cause digestive discomfort for some people.
Benefits
May support a varied eating pattern through legumes, vegetables, leafy greens, and spices. The combination may contribute plant-based protein, fibre, and naturally occurring plant compounds as part of a balanced meal pattern.
For Best Benefits
