Best Time: Lunch or dinner
Method
Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook gently for 4–5 minutes until softened. Add the mushrooms and cook for another 5 minutes until they release their moisture and begin to brown.
Add the carrots, celery, barley, broth, thyme, and black pepper. Bring to a gentle boil, then reduce the heat and simmer for 35–40 minutes, or until the barley and vegetables are tender. Adjust the seasoning and garnish with fresh parsley before serving.
Notes
Add cooked lentils, chickpeas, or tofu for extra protein. For a gluten-free version, replace barley with brown rice or quinoa and adjust the cooking time accordingly. The soup thickens as it cools; add more broth when reheating if needed.
Caution
Barley contains gluten and may not be suitable for people with coeliac disease or gluten sensitivity. Mushrooms may cause digestive discomfort for some people. Check broth and seasoning labels for sodium and allergen information.
Benefits
May support a balanced meal through mushrooms, whole grains, vegetables, and herbs. Barley may contribute fibre and naturally occurring plant nutrients, while the mushrooms and vegetables add variety and depth.
For Best Benefits
Allow the mushrooms to brown slowly and notice how the aroma changes. Serve the soup in deep bowls and take time to appreciate the earthy flavour, chewy barley, and gentle warmth.
