¾ cup pearl barley, rinsed

1.5 litres low-sodium vegetable broth

2 teaspoons fresh thyme, or 1 teaspoon dried

Black pepper, to taste

Method

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook gently for 4–5 minutes until softened. Add the mushrooms and cook for another 5 minutes until they release their moisture and begin to brown.

Add the carrots, celery, barley, broth, thyme, and black pepper. Bring to a gentle boil, then reduce the heat and simmer for 35–40 minutes, or until the barley and vegetables are tender. Adjust the seasoning and garnish with fresh parsley before serving.

Notes

Add cooked lentils, chickpeas, or tofu for extra protein. For a gluten-free version, replace barley with brown rice or quinoa and adjust the cooking time accordingly. The soup thickens as it cools; add more broth when reheating if needed.
