Method

Add the rinsed lentils, vegetable broth, tomato, carrot, garlic, ginger, cumin, and turmeric to a medium saucepan. Bring to a gentle simmer, then cook for 20–25 minutes, stirring occasionally, until the lentils are tender and beginning to soften into the broth.

Stir in the coconut milk and baby spinach during the final 3 minutes of cooking. Continue warming gently until the spinach wilts. Finish with lemon juice and taste for seasoning. Add a little extra broth if you prefer a thinner consistency.

Notes

Rinse the lentils thoroughly before cooking. Add more broth for a lighter consistency, or blend part of the mixture for a smoother texture. Fresh coriander, pumpkin seeds, or a squeeze of lime can be added before serving.
