1 cup hot water, just below boiling

2–3 fresh coriander leaves

Method
Place the fennel seeds and bruised lemongrass in a teapot or infuser. Pour over hot water and steep for 3 minutes. Add the green tea and continue steeping for a further 2 minutes. Strain, then add the lime juice, coriander, and honey if using. Serve warm.

Avoid using boiling water for green tea, as it can create a bitter flavour. Remove the tea after the recommended steeping time and adjust the amount of fennel according to preference.
