Method

Rinse and drain the chickpeas thoroughly. Place them in a large bowl with the tomatoes, cucumber, red pepper, red onion, olives, parsley, and mint. Add feta if using.

Whisk the dressing ingredients together and pour over the salad. Toss gently until the chickpeas and vegetables are evenly coated. Allow the salad to stand for 10 minutes before serving so the flavours can develop.

Notes

For a more substantial meal, serve with quinoa, whole-grain bread, or roasted vegetables. If preparing in advance, add the herbs and dressing closer to serving to keep the flavours fresh.

Caution

Contains chickpeas and may contain dairy if feta is used. Legumes may cause digestive discomfort for some people. Check olive and feta packaging for added ingredients and sodium levels.

Benefits

May support a varied eating pattern through legumes, fresh vegetables, herbs, and olive oil. Chickpeas may contribute plant-based protein and fibre, while the vegetables and herbs add colour and naturally occurring plant nutrients.

For Best Benefits

Serve this salad in a large shared bowl and invite yourself to eat more slowly. Let the colours and herbs create a sense of ease rather than rushing through the meal.
