Ingredients

1 litre low-sodium vegetable or kombu broth

2 tablespoons miso paste

150g firm tofu, cubed

2 tablespoons dried wakame seaweed

4 shiitake mushrooms, sliced

1 cup bok choy, chopped

2 spring onions, sliced

1 teaspoon grated fresh ginger

1 teaspoon low-sodium tamari (optional)

Method

Bring the broth to a gentle simmer in a medium pot. Add the wakame seaweed and shiitake mushrooms and cook for 5–7 minutes until softened. Add the bok choy and ginger and cook for another 2–3 minutes.

Place the miso paste in a small bowl and whisk in a small amount of hot broth until smooth. Remove the pot from the heat and stir in the miso mixture and tofu. Add tamari if using. Serve immediately, garnished with spring onions. Do not boil the soup after adding miso.

Notes

Use any combination of mushrooms or leafy greens you prefer. For a more substantial meal, add cooked soba noodles or brown rice. Choose a miso paste that suits your taste, such as white, yellow, or red.
