Ingredients
200g firm tofu, cubed
2 cups shredded red cabbage
1 carrot, julienned
½ cucumber, sliced
½ cup shelled edamame
2 spring onions, sliced
2 tablespoons fresh coriander, chopped
1 tablespoon sesame seeds
For the dressing:
1 tablespoon sesame oil
1 tablespoon lime juice
1 tablespoon low-sodium tamari
1 teaspoon grated fresh ginger
1 teaspoon maple syrup, optional

Method
Press the tofu for at least 10 minutes to remove excess moisture. Toss the cubes with a small amount of sesame oil and bake at 200°C for 20 minutes, turning once, until lightly golden.
Meanwhile, combine the cabbage, carrot, cucumber, edamame, spring onions, coriander, and sesame seeds in a large bowl. Whisk the dressing ingredients together. Add the warm or cooled tofu to the salad, pour over the dressing, and toss gently before serving.
Notes
Use pre-shredded cabbage to shorten preparation time. The tofu can be prepared in advance and reheated gently, although it is also delicious at room temperature. Replace tamari with a suitable alternative if required.
