Method
Preheat the oven to 200°C. Toss the sweet potato and chickpeas with olive oil, cumin, and black pepper. Roast for 25–30 minutes, turning once, until the sweet potato is tender and the chickpeas are lightly crisp.
While the vegetables roast, massage the chopped kale with a small amount of the dressing for 1–2 minutes to soften the leaves. Whisk the tahini, lemon juice, warm water, garlic, and black pepper together until smooth.
Arrange the kale on two plates or in a large serving bowl. Add the warm sweet potato and chickpeas, then finish with the tahini dressing, parsley, and pumpkin seeds.
