Method
Steep the hibiscus and rosemary in freshly boiled water for 6–8 minutes. Remove the tea and rosemary and allow the infusion to cool. Blend or lightly crush the berries with the lemon juice, then stir them into the cooled hibiscus tea.
Strain the mixture if you prefer a clearer tonic. Divide between two ice-filled glasses, top with sparkling water, and add a small amount of honey or maple syrup only if required. Garnish with fresh berries and rosemary.
Notes
Steep the hibiscus for less time if you prefer a softer flavour. Prepare the hibiscus and berry base ahead of time and add sparkling water just before serving. Use frozen berries when fresh berries are unavailable.
