Ingredients

2 medium beetroot, peeled and cubed

1 cup cooked green or brown lentils

2 oranges, peeled and segmented

2 cups rocket leaves

¼ red onion, thinly sliced

2 tablespoons walnuts, roughly chopped

2 tablespoons fresh parsley, chopped

For the dressing:
2 tablespoons extra-virgin olive oil

1 tablespoon orange juice

1 tablespoon lemon juice

1 teaspoon maple syrup, optional

Method

Preheat the oven to 200°C. Toss the beetroot with a small amount of olive oil and roast for 25–30 minutes, or until tender. Allow it to cool slightly while preparing the remaining ingredients.

Place the lentils, rocket, red onion, orange segments, parsley, and roasted beetroot in a serving bowl. Whisk the dressing ingredients together and pour over the salad. Toss gently and finish with the chopped walnuts just before serving.

Notes

Use pre-cooked lentils to shorten preparation time. Roast the beetroot in advance and store it in the refrigerator for up to a few days. Add the walnuts just before serving so they remain crisp.
