Ingredients
2 salmon fillets, approximately 120g each
3 cups mixed leafy greens
½ cucumber, thinly sliced
4 radishes, thinly sliced
1 avocado, sliced
2 tablespoons fresh dill, chopped
1 tablespoon pumpkin seeds, optional
For the dressing:
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
½ teaspoon honey, optional

Method
Season the salmon lightly and bake at 190°C for 12–15 minutes, or until cooked through and easily flaked. Allow it to cool slightly before breaking it into large pieces.
Arrange the leafy greens, cucumber, radish, avocado, dill, and pumpkin seeds on two plates or in a large serving bowl. Whisk the dressing ingredients together and drizzle over the salad. Add the salmon just before serving and finish with extra dill and lemon.
Notes
Use leftover cooked salmon to make the recipe faster. The salad can also be prepared with trout, sardines, tofu, or chickpeas depending on preference. Add the dressing just before serving to preserve the texture of the greens.
